Canestrelli are popular desserts, whose origins are very ancient. In the Canavese area and in the Susa Valley they were prepared since the Middle Ages under the name of nebule, probably by the guilds of wafer producers. They were offered on the occasion of weddings, baptisms, religious celebrations, carnivals.

The shortcrust pastry canestrelli, probably more recent, belong to the Ligurian tradition and in the current recipe they have a precise temporal and geographical location, i.e. the beginning of the 19th century in Torriglia, the ancient Apennine capital of the imperial fiefdoms of the Doria Pamphilj which extended into Val Trebbia up to the area of Piacenza today, still the main center of production of this sweet in the classic recipe.
