The black truffle is widespread above all in Tuscany and Umbria, in southern France and in Aragon. It has a blackish rind with more or less marked reddish veins and is rather irregular in shape (it appears lumpy). It is considered the most valuable after the white truffle and, unlike the latter which gives its best when consumed raw, it develops its aroma when cooked, although it can also be appreciated raw.
