Golfetta is a distinctive and unique salami made from Italian pork. Golfetta is a bagged and seasoned cured meat made from ham from pigs reared according to the PDO specifications of Prosciutto di Parma and San Daniele. It has a lipid content of around 12% and is rich in sodium, potassium, calcium, magnesium, phosphorus and vitamins B1, B2, PP. It has a good protein content, about 32%. Low fat content and gluten free. It is recommended to consume with virgin olive oil or lemon to enhance its flavours.
The sliced Golfetta must be kept in the refrigerator for 1-2 days maximum, well covered. If whole, it is best to keep it in the refrigerator anyway. Once started it is necessary to cover the cut part with cling film.
