Frisella (also called "frisa" or "fresella"), is a sort of donut-shaped or tarallo-shaped biscuit bread typical of Apulian cuisine, but also very common in Campania, Calabria and Basilicata. It is a gastronomic product with durum wheat flour (or barley) cooked in the oven, cut in half horizontally and browned again in the oven. It follows that it has a porous face and a compact one. It is important to distinguish between frisa and bread: in fact, frisa is not bread, as it is cooked twice.
