The caper is a small shrub with white and pink flowers. The floral buttons are harvested between May and September and put in salt.
Top quality ingredients, such as capers from the Safì hills, grown close to the ocean. And then the salt from the Saline di Margherita di Savoia and the Italian wine vinegar, for natural and artisanal processing, without additives and preservatives.
