Capocollo is a Calabrian cured meat obtained from the upper part of the loin and the neck of the pig, after salting and seasoning, it's processed according to the wise Calabrian charcuterie tradition, known throughout the world for the value of its products. Capocollo or Coppa is one of Italy's finest cured meats. Dry-cured with aromatic herbs and red wine, capocollo has a homogenous dark red colour with streaks of white fat. It is made from the pork loin, the neck muscle. We recommend sharing with cheese, olives and wine.
