Caciocavallo is a food belonging to the milk derivatives; more precisely, it is a non-dairy cheese (because it contains little lactose). Caciocavallo is source of high biological value proteins, calcium, phosphorus and riboflavin (vitamin B2). This cheese is matured in Calitri's stone caves, which are the perfect environment to build a cheese that has a unique organoleptic profile due to natural conditions of temperature and humidity.
