Its name, caciocavallo (literally, "cheese on horseback"), is related to the first cheeses ever made in ancient Rome. It originated in the southern Italian regions in the 14th century. In its young state, caciocavallo has a mild, slightly salty taste and a firm, smooth texture. The taste becomes sharper and granular as it ages. This cheese belongs to the pasta filata family, along with provolone and mozzarella.
