Black olives are a black variety of the olive tree's fruit. They vary from green ones in that the fruit is allowed to ripen on the tree for a longer period of time, allowing for a later harvesting window (normally between November and December). The intensity of their colour changes as a result of this (which can go from purple hues and undertones, to a bright and brilliant black).
They differ in size as well (from the smaller and rounder varieties, to the larger elongated ones). The nutritional content of all of our black table olives is remarkable. Black olives, in particular, have a reduced carbohydrate content (lower than any other edible fruit).
The conservation procedure decreases this already-minimal quantity even further, rendering them sugar-free. It may be a healthy addition to any diet. They also assist digestion due to their high fibre content.
They also have significant healing qualities since they are high in mineral salts and vitamins. Our black olives originate from a variety of places, including Italy (such as the highly regarded Tagiasca olive from Liguria or the delectable black olives of Lazio) and Morocco's warm terrain.
Depending on your tastes, you may find them in brine or pickled form. Our brined black olives are frequently employed in delectable dishes, such as the hot and spicy sauce for "Spaghetti alla Puttanesca." However, they should not be overlooked in recipes such as bread making or even a simple tapenade pate.
