All olive fruits begin life as green. They only turn a deeper colour with time and ripening (that can vary from pinkish hues to brilliant black). Olives can also differ in form (some are rounder, while others are more oval), weight (between 1.5 and 12 grammes per olive), and length (up to 3 cm long). Green olives harvesting usually takes place at the end of the summer (between the months of September and October). Sweet green olives, on the other hand, should not be consumed immediately after picking since they contain chemicals that make them bitter. As a result, they go through a de-bittering procedure.
Miccio olives are made in a special way, employing both traditional and modern techniques. They've been enhanced with technology to make them sweeter, their green colour more brilliant, and their quality unquestionably better. As a result, our pickled and brined olives differ significantly from the typical industrial olive. As everyone knows, Italy is one of the world's major producers of olives (the second largest), with over thirty distinct types to choose from (from white olives to black ones).
Green olives from Puglia, as well as those from Sicily (such as the P.D.O. Nocellara del Belice olive - one of our excellent goods), are particularly notable. They are available whole or pitted, brined or pickled. Because of their anti-oxidant properties, they are incredibly nutritious and valuable to our bodies.
